I first tried making these because I saw a store-bought version and they looked really good. I bought them, and they really were very good. But at about a dollar per date, I wasn’t exactly eager to keep buying them. So I decided to see if I could make them myself. Turns out, it’s ridiculously easy. My version is made with just four ingredients: Medjool dates, peanut butter, peanut butter powder, and cocoa powder. They’re sweet, chocolatey, peanut buttery, and every bit as good as the expensive ones for a whole lot less.

If you buy pitted dates, the whole thing comes together really quickly. I like using a piping bag to get the filling inside without cutting the dates open, but you absolutely don’t have to bother with that. Slice them down the middle, add the filling, and they’ll taste exactly the same. The peanut butter powder is totally optional too, I just use it to make the peanut butter a little thicker. You can also dip them in melted chocolate if you want to make them a little more indulgent, but I usually skip it. They really don’t need anything else, and I’m very happy to no longer be paying a dollar every time I want one.

  1. Using a rubber spatula, mix all of the ingredients other than the dates and chocolate chips in a small bowl.
  2. When the ingredients are fully combined and in a thick paste, add them to a piping bag with a piping tip, or with the tip cut off.
    If you don't have a piping bag, use a ziplock bag. Put tape (on the outside) on one of the corners on both sides, fill the bag with the paste, close the bag, and cut off the tip. The tape will keep the bag from ripping when you are piping them.
  3. Find the hole on the pitted date.
    If you can't find one, use a chop stick to make a hole on one end.
  4. Pipe the filling into the date. That's it. You're done!
  5. If you have left over filling, you can make more, or do like I do and use it as a dip for pretzels. It's delicious!
  6. Keep these in the fridge and enjoy!
    Sometimes I keep them in the freezer and they're delicious. They are soft even when frozen, and remind me of ice cream.
